What's March Without a DIY Low-Carb Shamrock Shake?

Face it, it's why we all look forward to March. It's Shamrock Shake season! Those plastic cups full of minty goodness just scream spring... although sometimes the weather doesn't get the memo.

Luckily this year, all is looking good on the weather front, with some downright spring-like temps here in the midwest. So when my son came home toting one of those green shakes the other day, I thought to myself, "I MUST figure out a low carb way to make Shamrock Shakes happen."

Luckily, I have a base smoothie recipe that is pretty easily adaptable, especially if you're a low-carb or keto veteran. (The same base I use for my amazing peanut butter smoothies.) These are ingredients you'll likely already have on hand. Always a bonus for spur-of-the-moment snacking and kitchen science!

So let's get you sippin' on one of these low carb, sugar-free Shamrock Shakes!


You'll need: 

1/2 cup cottage cheese (I use 4% milkfat)
1 cup unsweetened vanilla almond milk (or any other low-carb dairy-free milk)
1 scoop low carb protein powder ( I use EAS Advantedge vanilla)
4-5 squirts of sugar-free vanilla coffee flavoring (I use Starbucks) or other sweetener of choice
8-10 drops (or to taste) pure peppermint or mint extract 
4-5 ice cubes
3-5 drops green food coloring (optional)
*Maybe a small amount of chocolate syrup for garnish. Can also use whipped cream, as most are low in carbs. 

Put all of the ingredients in a bullet-type personal blender. (Hope you have one that handles ice well. I use this one.) Blend up and enjoy!
